Brendan whips up Ricotta Donuts with Strawberries & Cream

  1. Heat oil in a deep pan until 175C.
  2. Combine ricotta, eggs, vanilla and caster sugar in a large bowl and whisk until smooth. Sift in
    the flour, baking powder and a pinch of salt. Use a spatula to combine (fold gently).
  3. Working in batches so as not to overcrowd the pan, gently spoon in balls in the hot oil and
    fry for 3 – 4 mins, turning once or twice, until golden brown. Transfer to a plate lined with
    paper towels and serve with strawberry jam (below) and cream. Dust with some icing sugar
    if you’d like.
  4. To make the strawberry jam, add strawberries, sugar and lemon juice to a saucepan over
    low to medium heat. Stir until the sugar has dissolved then increase the heat slightly.
    Continue to cook and stir until the strawberries have broken down and the jam has
    thickened, about 10 minutes. Let cool to room temp before using.

Ingedients

  • Thickened cream, to serve
  • Icing sugar, to serve

Ricotta Donuts

  • Vegetable oil, for frying
  • 200g ricotta
  • 2 eggs
  • 1 tsp vanilla extract
  • 3 tbsp caster sugar
  • 200g plain flour
  • 2 tsp baking powder

Strawberry jam

  • 600g strawberries, hulled and chopped
  • 2 cups of caster sugar
  • 40ml lemon juice

Method
